Fruity vinegar is made using Balsamic vinegar of Modena and natural fruit juice.
The finished product is the classic Aspretto with a persistent crispy taste and a sweetish aftertaste.

White and Red cooked grape must
White and red grape must vinegars are obtained from grape must which is slowly simmered until it is well reduced
and reaches a concentration averaging around 50%. Then it is left to rest to allow the natural fermentation to begin.
Once a week the must is decanted to facilitated fermentation.
Once this process is completed the must is stored to rest for several months in oak barrels to refine its
qualities. In this way it matures and is further reduce developing a smooth soft round character with a heady
aroma and taste with final notes of fruits typical of refined must vinegars.
Monovarietal cooked grape must
Dark, thick, syrupy, shining color and taste with final notes of fruit, typical of the
grape must refined in wood. The monovarietal cooked grape musts are obtained by the monocultivar grape varieties and each one is
characterized by the sharp and persistent flavour given by the grape of origin: Cabernet, Merlot, Syrah, Lambrusco, Sangiovese
Truffle and Hazelnut Premium Riserva
Simmered cooked grape must with the
addition of some wine vinegar, then enriched with flavouring. The condimentum is refined in oak barrels for several months.

Our wine vinegar is obtained from a selection of the finest Italian wines, acidified and refined in oak barrels.
A higher percentage of residual alcohol is left in order to exalt the complexity of aromas and the scent. A mild filtration maintains the
vinegar’s typical qualities of aged wine, with its round and soft flavour.
